This is a tangy twist for browned Chicken breasts. Great to serve with steamed rice and salad or Hummus and Pita bread.
What you will need:
4 Boneless Chicken breasts
2 tsp. Coconut Oil
1/2 a squeezed Fresh Lime
1 Tbsp. Caribbean Belize Island Blend
1 Tbsp. chopped Fresh Mint or Green Onions
Cut the Chicken into 1.5 cm strips. Make a marinade from all the ingredients except for the Coconut Oil. In a bowl, place the marinade and Chicken with enough lime juice to make wet. Marinade for at least 7 hours in the refrigerator turning Chicken every few hours. Overnight is best.
Drain the Chicken and reserve the marinade.
Heat the Coconut Oil in a medium pan; add Chicken and cook over high heat for 5-10 minutes or until lightly browned and tender. Stir in reserve marinade.
