Mexican Scampi

Mexican Herb Scampi

Now this is an interesting sounding dish! Mexico meats Italia. I think this is best served on top of white rice but pasta is fine too. This is a one serving recipe so multiply ingredients for more servings.

What You'll Need:

6 pieces of peeled shrimp uncooked rubbed in Caribbean Belize Mexican Herb Blend.

1/8 cup Olive Oil

1/2 small Onion finely diced

2 Garlic Cloves minced

1 Tbsp. Flour (mixed with 1 Tbsp. Water)

2 Tbsp. Fresh Lime Juice

1/2 cup Heavy Cream

1/4 - 1/3 cup of water ( only if needed in case sauce is too thick)

1/2 cup White Cheddar Cheese (finely shredded)

Prep:

Heat the Olive Oil in a pan. add wine and lime juice. When mixture starts to boil add the shrimp. Cook on medium heat until shrimp starts to curl and are done. Remove the shrimp but leave the mixture.

In the same sauce pan add the onion and garlic salt. Saute until the onions are transparent. Add the flour and water paste. Stir and cook until sauce is thick. Pour the cream into the sauce and stir. Add the cheese a little at a time and whisk continuously as you add more.The sauce should be a medium consistency and smooth. If the sauce is too thick, add a little water and whisk some more. Remove from Heat.

For Presentation You'll Need:

Cooked White Rice or Pasta

Present with a layer of rice or pasta on the plate. Arrange the shrimp upon the rice as you like. Spoon the sauce in the middle of the plate first then cover the shrimp. Sprinkle with the sliced olives, onions, and tomatoes. Sprinkle crushed red pepper on top.
